Recipe - Pistachio Cake
For as long as I can remember, my grandmother would bake this pistachio cake for every St. Patrick's day. I didn't care about the soda bread, potatoes, or corned beef; this cake is what I looked forward to! ☘️
We lost my grandmother two years ago. To honor her memory, I've decided to make this cake every year on St. Patrick's Day. Food is a beautiful way to connect with lost loved ones and ancestors. 💜
I know she will be happy that I carry on the tradition and not burn the cake. 😂
Cake Ingredients:
1 15.25 Oz package vanilla cake mix
1 cup whole milk
3 eggs
3/4 cup vegetable oil
1 3.4 Oz package pistachio instant pudding
1/2 cup finely chopped pistachios
Green food coloring (optional)
Whipped Frosting Ingredients:
1 3.4 Oz box instant pistachio pudding
1/2 cup whole milk
1 8 Oz tub of Cool Whip
1/2 - 1 cup chopped pistachios
Directions:
Preheat oven to 350 F & grease a 9x13 cake pan - bake for 22-25 minutes.
1. Combine the cake mix and pistachio package pistachio instant pudding into a bowl and mix together.
2. In another bowl, combine the milk, oil, and eggs and mix together.
3. Slowly add the dry ingredients to the wet ingredients and mix until well combined. Then add the pistachios and a few drops of green food coloring and mix.
4. Place the cake batter into your greased pan and bake for 22-25 minutes.
5. While the cake is baking, prepare the frosting by mixing the pistachio pudding pack and milk together and whisk for two minutes.
6. Whisk the pistachio pudding and Cool Whip until smooth.
6. Remove the cake from the pan once it has cooled. Once cooled, spread the whipped frosting on the cake and sprinkle on the chopped pistachios.
9. Cut and Enjoy!
